Chopping Boards
Two boards of white quartz, one large with two handle slots and one small with one. The slots are cut right through with round ends, so each board can be lifted with the fingers or hung on a hook. A board is a floor for a knife. These are made to be the hardest, flattest, cleanest floor in the kitchen, and to look like nothing at all.
White quartz is engineered rather than quarried. It is non-porous, so garlic and beetroot do not go into it, and it is white through its whole thickness, so a scratch is white too. At 18 mm the large board does not flex across its width when a joint is cut on it, and it still lifts with one hand by the slot. The edges are eased and the faces honed, so a wet board does not shine.

The pair is made for a counter where they lean against the wall between uses, the small one in front of the large one. The small board is for bread and cheese and goes to the table as it is; the large one stays by the hob. A knife meets quartz with a sound harder than wood, and the board will outlast many knives.

Two sizes, one thickness, one slot. The slot is the width of four fingers laid flat, and its round ends mean there is no corner inside it to catch a knuckle or a crumb. Cut through the full thickness, it is also where the board hangs when the counter is cleared, so the slot is a handle, a hanger and the only line on the board.
Boards 457 × 305, 406 × 178 mm; slots 102 × 22.
